Best camping recipe for potatoes ever!

Cooking (and eating) by the campfire can be an ab-fab experience in and of itself (and a bit of a challenge).  The food you bring needs to be pretty tough to withstand the unique outdoor kitchen environment (not easily crushed, broken or spoiled) but that doesn't mean that it can't taste good!

Try my camping potato recipe.  Your mouth will thank me.

Ingredients:
(This makes enough for two people)

The biggest potato you can find
An onion about half that size
1 stick of butter (not a typo)
Adobo

Chop the potatoes and onions into half inch cubes.  Follow the technique that works for you.

Over the fire technique
Spread out a piece of aluminum foil.  Slice up half a stick of butter (you won't need the other half).  Add potatoes and onions.  Sprinkle with as much Adobo as you feel is appropriate.  Seal the foil up.  Wrap with a second piece of foil.  Throw on the grill over the fire and relax.  Turn after 30 minutes.  Cook for another 30 on the other side.  Open and eat.  Yum!

Pan on the camping stove technique
Throw the entire stick of butter in the most mondo frying pan you have.  Add potatoes and onions.  Sprinkle with Adobo.  Cover and cook over medium-low heat for about 45 minutes, stirring every 5-10.  Drain on a paper towel or plate or something before serving.  Dig in!
